Former 45 Jermyn Street head chef Jamie Shears has been appointed as executive chef at 45 Park Lane, where he will oversee the culinary direction of the hotel, including Wolfgang Puck’s CUT at 45 Park Lane.

Shears will celebrate locally-sourced produce on the menu at CUT, emphasising fish from his home town in Devon, as well as increasing the number of vegetarian and vegan dishes on the menu.

The chef previously worked under Jason Atherton at Maze, and across the Gordon Ramsay group at Castel Monastero in Italy and Petrus. Shears went on to become executive sous chef at Galvin at Windows, before moving on to 45 Jermyn Street.
