Marvellous millefeuille

Marvellous millefeuille

Indulge yourself with a French fancy and a cocktail at Selfridge’s Fount Bar this October.

World renowned chef Anne-Sophie Pic will be showcasing a trio of her famous “millefeuilles” when she takes over the bar for the month.

Anne-Sophie currently holds seven Michelin stars across her restaurants.

She will pair each of her millefeuilles (pictured) with a cocktail crafted by the world-renowned team at Mr Lyan Studio. He is known as the “cocktail king”.

Anne-Sophie has made a new Pink Millefeuille just for the occasion.

It has a beetroot and sherry vinegar jelly layered with Yellow Bourbon coffee cream.

Traditionally a millefeuille is made up of layers of puff pastry filled with custard or cream and is like a vanilla slice.

Anne-Sophie’s signature White Millefeuille is a fine example of her culinary style.

It combines sleek design with delicate flavours.

The takeover is the first time Anne-Sophie’s millefeuilles have been available outside her five restaurants. They include La Dame de Pic London.

Cocktail pairings

Guests will sit at the bar and enjoy the Pink Millefeuille complemented by Mr Lyan’s Carrara Spritz. Find Nordic gin, bitter almond, grapefruit oils and Champagne in this luxury cocktail.

The Yellow Millefeuille features chamomile and beeswax cream sitting on top of a fragrant oolong jelly.

Enjoy it with the accompanying Eventide cocktail. This is made up of Star of Bombay Gin, rhubarb and fennel, Campari, Champagne and lemon sorbet.

The signature White Millefeuille is made with Tahitian vanilla cream and jasmine jelly. It is being paired with the Gelateria Daisy cocktail.

Four Roses Bourbon, raspberry Champagne and lemon shaken with Escubac spiced aperitif go into this drink.

Anne-Sophie said: “I’ve always been captivated by the world of mixology.

“Our team has worked alongside Mr Lyan to produce the perfect balance of flavours for our millefeuille.

“I think we have created quite the pairing!”

The millefeuille and cocktail pairing is available throughout October at The Fount Bar, Selfridge’s and costs £35 per person.
